I ordered the books on Monday, Dec. 29th. I had to pay $10 and change for 3 day shipping and did not receive the books until the following Monday, Jan 5th. Forschner name was first carved in steel in 1855 and has become very popular in restaurants and commercial use. The high carbon no stain stainless steel blades hardened to a Rockwell Hardness of 54-58 and are hand finish by Victorinox in Switzerland by skilled craftsman using a special tempering process to produce an edge that can be resharpened over and over again. The blades will not discolor or corrode. Fibrox handles have a ergonomic design and a gritty finish which allows increased safety when the handles are wet or greasy.

Hello, Craig. You might remember this communication with my wife re the knife with the nick. We've been so satisfied with the knife. After your conscientious response to her concern about the nick on the blade and offering to send a replacement, she was prompted to take the knife to a knife store when we visited a larger city recently.
