|We had 3 deer butchered at the local butcher that does 100's a deer a season and they did a terrible job. When they cut up the deer such a chops they left all the fat and tallow smeared all over the chop ,which we didn't realize at the time and now that we are using it up much of the meat has turned brown and smelly. My husband usually does his own but we didn't have time and the first thing he learned was to remove all that stuff Fat And Tallow, VERY IMPORTANT or else it makes the meat gamey and all. The BUTCHER said they NEVER scrape there venison, out of all their customers and that would NOT Make the meat bad or gamey. WHAT is your opinion? I have to bring the owner some of the meat (he's on vacation) and I am just trying to gather as much info as I can.|
